Flavours of the Coast

Ingredients are sourced as close to their origin as possible, directly from local fishermen, farmers, and producers. Menus will follow the seasons, celebrating the finest ingredients the sea and surrounding nature have to offer throughout the year. Traditional preservation techniques such as fermentation, curing, and pickling will be used to enhance and preserve flavours across the seasons.
The ambition is to create a dining experience where exceptional ingredients, generous portions, and refined craftsmanship are at the heart of every meal. The cuisine will be elegant in presentation yet grounded in its philosophy, with deep respect for the ingredients and the culinary traditions of Norway's west coast.

Byrknes Ocean Resort is set in one of Western Norway's most distinctive coastal landscapes. Surrounded by more than 1,000 islands, islets, and skerries, and located close to the entrance of the Sognefjord, the resort provides the perfect setting for unforgettable experiences throughout the year.
Here, the sea, nature, and ever-changing weather are an integral part of every stay. Some guests come to explore the coastline from the water, others to discover the surrounding landscape on foot, while many simply come to unwind and take in the peace, tranquillity, and spectacular views.

Eit naturleg utgangspunkt

Flavours of the Coast
Byrknes Ocean Resort is developing a culinary concept where the sea, the changing seasons, and locally sourced ingredients take centre stage. With access to world-class seafood and a proud coastal heritage rooted in the fishing community of Byrknes, dining will be a natural extension of the landscape beyond the windows.
